I've found that my meal preparation most often falls into two strategies: Meal Plans and "Throwing Stuff Together." I failed on Meal Plan making this week since I still haven't taken adequate stock of what's in the garden, so tonight was another "Throw Stuff Together" night.
The beauty of this sort of casserole is that you really can use just about whatever you have on hand. I happened to have a tub of beans that I cooked in the slow cooker last week (I made way more than I needed for bean stew), so I used that as my base.
